Indoors the enemy is grease and noise; outdoors it is salt, water and whatever has moved into the duct. We do not diagnose them the same way and we do not maintain them the same way. ### Ducted or recirculating is the first question A large share of “the hood does not work” calls are hoods working exactly as installed. A recirculating hood cannot clear steam. Knowing which one is over your range turns a service call into a two-minute conversation, and where the installation is genuinely wrong for the cooking, we would rather say so than sell a repair that changes nothing. ### Filters are the maintenance nobody was told about Baffle filters over high-output burners load quickly, and a loaded filter is both an airflow problem and a fire one. Before anything is opened, we establish where the air is going. A recirculating hood filters and returns air to the room and will never clear steam or smoke the way a ducted one does — that is the installation, not a failure. If it is ducted, the usual causes are loaded baffle filters, a duct that has collapsed or been crushed above the ceiling, an exterior damper that has stopped opening, or a blower running at a fraction of its speed. In this climate a wall cap with a nest in it is a routine finding, not an exotic one. ### The blower has become loud. Noise that came on gradually is usually bearings or an impeller loaded unevenly with grease; noise that arrived suddenly is usually something loose, something in the impeller, or a mount that has let go. Both are worth acting on rather than living with, because an out-of-balance blower wears its own housing. On outdoor hoods add corrosion to the list: a mount that has rusted through changes the sound before it changes anything else. ### The lights work and the fan does nothing, or the other way round. That split is useful because lights and blower usually take different paths out of the same control. One dead and one alive points at the control or at that circuit rather than at the supply; both dead points at the supply, the switch or the board. On outdoor hoods it points somewhere else first — water gets into a switch housing on a terrace and behaves exactly like a failed control until somebody opens it. ### What is a realistic washing interval for the filters? More often than anyone does them, and on this kind of cooking that is not a scolding — high-output burners and a griddle put out far more grease than a domestic hob. Baffle filters are dishwasher-safe and the difference in airflow before and after is immediately obvious.
