A grill is built to carry rendered fat away from the flame. Radiant trays spread the heat and shed what falls on them, a tray beneath collects it, a channel takes it to a cup that can be emptied. When any part of that is loaded, missing or refitted the wrong way round, the drippings arrive on the burners instead — and that is the flare-up people describe as the grill turning on them. We see it most on grills that are immaculate on the grates and untouched one layer below, and in this market it is the commonest cause of a grill fire. It is also the cheapest work on the island, which is the least comfortable part of the arithmetic.

Strip the path and show you what was in it

Grates, radiants, the tray and the channel. People are frequently shocked, and that is the point — the photograph is worth more than the explanation.

Clean, inspect and replace what has burned through

Radiants that have warped or holed no longer shed the way they should. A tray that has corroded through delivers fat to the cabinet beneath it rather than to the cup.

Refit it as a system and explain the interval

Orientation matters and is easy to get wrong. Before we leave we show you how the parts go back and roughly how often, for the way you actually cook, this needs doing again.

### How often does this need doing?

It depends entirely on what gets cooked. A grill used for fish and vegetables is a different machine from one that does a brisket most weekends. We show you the state of the path when we open it, which tells you more about your interval than any general figure.

### Can I do it myself?

The clearing, yes, and it is worth doing between visits. What people get wrong is refitting: the radiants have an orientation, and upside down they defeat the whole design while looking perfectly fitted. We show you how they go back before we leave.
