What to do in the next ten minutes
Rinse the whole thing with fresh water and dry it, which removes the salt film doing the damage. Then look past the flat faces: the hinge pins, the fixings around the vents, the underside of the hood and the mounts holding anything up. Speckling there matters in a way that speckling on a door front does not.
What stainless actually does
It is not immune to rust — it carries a thin passive layer that reforms when it is damaged, provided the conditions let it. Salt, chlorides and abrasion all interfere with that. So the maintenance is not polishing; it is removing what stops the steel protecting itself, and doing it before pitting starts rather than after, because pitting does not reverse.
The parts that are not cosmetic
A speckled door is a shame. A hinge pin that has corroded is a door that will not close square, which is a seal that fails, which on a cold cabinet is water and on a hot one is heat going where it should not. The same is true of the mounts under an outdoor hood. When we look at corrosion we are looking at those first and at the faces last, which is the opposite of what most people expect.

Can the pitting be polished out?
Light surface speckling, often. Actual pitting, no — the metal is gone, and aggressive polishing removes more material and more of the passive layer with it. Where it is on a visible face and bothers you, there are things that help; where it is structural, replacement of the fixing is the honest answer.
Does a cover help or hurt?
Both, and it depends how it is used. A cover keeps rain and direct salt spray off, which helps. A cover put on a warm grill, or left on a wet one for weeks, traps humidity against the steel and is worse than nothing. Cover it dry and cool, and let it breathe occasionally.
